Its cylindrical shape is typical, as is the appearance and colour of the slice: uniform pink (finely minced meat) dotted with well-defined white cubes (the so-called lardelli, top quality fat). The scent is unmistakable, slightly spicy, while the taste is full and well balanced, thanks to the presence of lardelli that sweeten the flavour of the meat.
Italian mortadella has a centuries-old history and is produced using techniques that are unique in the world. There are mortadellas of all sizes: from 500 grams to over 100 kilos. Mortadella Bologna and Mortadella di Prato are marked with the Community PGI recognition.
