WAFFLE FILLED WITH COOKED HAM, PUMPKIN CREAM, BRIE AND VALERIAN

60g BRIE CHEESE
40g VALERIAN SALAD
200g COOKED HAM
100g PUMPKIN CREAM
Pumpkin cream
Ingredients for 0.5 kg

500g DELICA PUMPKIN
50g WHITE ONIONS
25ml EXTRA VIRGIN OLIVE OIL
300ml WATER ‘BASED ON CONSISTENCY’
5,5g SALT
Peel and cut the pumpkin into pieces.
Cut the onion into julienne strips.
Sauté onion and oil.
Add the pumpkin and water and continue cooking.
When cooked, puree with an immersion blender and adjust the flavour.
Dilute with water to the desired consistency.
Preparation
Stuff the waffle with shredded cheese.
Allow the waffle to cool in the oven.
Complete with pumpkin cream, valerian salad and thinly sliced cooked ham.
