Butchers and charcutiers are a point of reference for the consumer and an important guide in purchasing choices and product enhancement. In fact, they combine knowledge and craftsmanship with continuous professional updating to meet the new needs of customers, who are increasingly sensitive to issues such as sustainability, food safety and animal welfare.
In Italy, there are numerous courses and training courses for these figures, who must have an in-depth knowledge of the products they deal with, but also of the supply chain upstream, from breeding to the table, production, processing and seasoning techniques, right up to nutritional values and pairing proposals.
